Baked German Potato Salad
Ingredients
1 cup chopped bacon
½ cup chopped celery
1 cup chopped onion
3 T. flour
1 T. salt
2/3 cup sugar
2/3 cup vinegar
1 1/3 cups water
½ tsp pepper
8 cups sliced cooked potatoes
Preparation
Fry bacon in skillet until crisp and remove
Drain skillet save ¼ cup of drippings
Add celery, onion, flour and salt to drippings in skillet
Cook until onion is translucent, stirring frequently
Add sugar, vinegar, water and pepper
Cook until thickened stirring constantly
Pour over potatoes and bacon in 3 quart baking dish
Bake, covered at 350 for 30 minutes
Serve warm
