Hooters Buffalo Chicken Wings

 Ingredients:

Vegetable oil (for frying )
1/4 cup butter
1/3 cup Crystal Louisiana Hot Sauce
1/4 teaspoon ground pepper
1/2 teaspoon garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/3 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wing pieces

On the side
Bleu cheese dressing
Celery sticks

Directions:

Heat oil in a deep fryer to 375 degrees. You want just enough oil to cover the wings entirely – an inch or so deep at least.

Combine the butter, hot sauce, ground pepper and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients well-blended. Combine the flour, paprika, cayenne pepper and salt in a small bowl.

If the wings are frozen, be sure to defrost and dry them. Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.)

Put all the wings into the hot oil and fry them for 10 to 15 minutes or until some parts of the wings begin to turn dark brown.

Remove the wings from the oil to a paper towel to drain. But don’t let them sit too long, because you want to serve the wings hot.

Quickly put the wings into a large bowl. Add the hot sauce and stir, coating all of the wings evenly. You could also use a large plastic container with a lid for this. Put all the wings inside the container, add the sauce, put on the lid, then shake. Serve with blue cheese dressing and celery sticks on the side

Hooter’s Special Dipping Sauce for Wings

Ingredients:

8 ounces Tabasco Sauce
3 tablespoons brown sugar
2 tablespoons ketchup

Directions:

Mix all three ingredients together in a small sauce pan. Simmer over medium low heat for 10 minutes, stir frequently. When sauce has simmered and completely blended pour in a small serving bowl and let cool before serving. Makes 1 1/4 cups.

Ingredients

2 medium baking potatoes
4 tablespoons olive oil
1 medium green pepper
1 medium red pepper
1/2 teaspoon salt
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh garlic, minced
4 teaspoons fresh parsley, chopped
1/2 cup Romano cheese, grated

Directions
Preheat oven to 350 degrees.
Peel potatoes and dice into1/2-inch pieces.
Core and seed peppers and dice into 1/2-inch pieces.
Set aside.
Mix olive oil, rosemary, salt and pepper in a bowl.
In a small baking pan, toss potatoes and peppers with the oil and herb mixture.
Bake for 10 minutes or until potatoes are fork tender.
Sprinkle potatoes with parsley and Romano cheese.

Ingredients

4 (8 ounce) catfish fillets
1 cup milk
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon paprika
1 cup cornmeal
vegetable oil

Hush Puppies

Ingredients
1 cup cornmeal
2 tablespoons baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon white pepper
1/3 cup minced onion
1 large egg — beaten
1/4 cup milk

Directions

Catfish: Rinse and pat catfish dry. In a shallow dish, mix together milk, salt, pepper, and paprika. Dip pieces of fish in milk mixture. Roll fish in cornmeal and set pieces on waxed paper to dry. Heat 1 1/2 inches of vegetable oil to 350 degrees. Deep fry fish, turning once, until golden brown. Drain on paper towels and keep warm.

Hush Puppies: Mix cornmeal with baking powder, salt, pepper, and onion. Mix egg with milk and whisk into cornmeal. Spoon hush puppies into hot oil and fry until golden brown. Makes 4 servings

Ingredients

2 pounds potatoes, peeled and quartered
2 ounces butter, unsalted, room temperature
1/3 cup heavy cream
1/4 cup sour cream
4 ounces white Cheddar cheese, grated
1 teaspoon salt
1/2 teaspoon white pepper

Directions

Place potatoes in pot and cover with cold water.
Bring to a boil and simmer until fork tender.
Drain completely.

Mix potatoes with an electric mixer until smooth. When smooth, add butter and blend. Add cream, a little at a time and beat; add sour cream and blend. Add cheese, salt and pepper and blend again.

Tastee Onion Chips And Dip

Tastee Onion Chips

5 pounds yellow onions
1 ½ pounds white flour
1 ½ cups water
4 ½ tsp sugar
1 ¾ tsp salt
1 ½ cups milk
1 T. melted Crisco

Peel onions and cut into wedges top to bottom
Separate layers
Put in plastic bag containing ¼ cup flour
Mix remaining flour, water, sugar, salt and milk
Mix until smooth
Batter should be thick like pancake batter
Add Crisco and mix together

Dip wedges into batter
Deep fry until golden brown

Tastee Onion Dip

16 oz cottage cheese
16 oz sour cream
¼ tsp celery salt
¼ tsp onion salt
¼ cup or less of milk
¼ tsp pepper
½ tsp salt
½ tsp Accent
½ envelope Lipton onion soup mix

Use a hand mixer for the preparation
Put cottage cheese in a bowl with 1 T. milk
Mix well until it doesn’t look like cottage cheese
Reserve remaining milk
Add all other ingredients
Mix at high speed until sour cream rises
Add remaining milk as needed while mixing

Seasoning Mix:

Take an 8 oz. jar and fill it with the ingredients listed below
4 oz. of ketchup
3 heaping teaspoons of prepared mustard
3 heaping teaspoons of Silver Springs Cream Style horseradish
3 level teaspoons of Worcestershire sauce
5 heaping teaspoons of iodized salt
1/4 teaspoon of black pepper
This should fill the jar, if not add ketchup, stir thoroughly.

Cooking Directions: 

Place 5 lbs of 85% ground beef in a flat bottom kettle
Pour the seasoning over the beef in the kettle
Fill the same jar 8 oz. with warm water and pour over meat
Fill the same jar 8 oz. with ground yellow onions, empty into kettle
Add a heaping teaspoon of Accent of top of meat
Take a wooden spoon to stir and mix ingredients

Over a low flame stir constantly with wooden spoon for about 15 minutes or until meat is broken apart finely. Then increase heat about 1/4 until it boils, let boil about 25 minutes stirring every few minutes so it doesn’t stick
