- In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until smooth. Set the stir fry sauce aside.
- Heat 1 tablespoon of the olive oil in a large skillet or wok over medium-high heat. Add the diced chicken pieces and season with salt and pepper. Cook, stirring occasionally, for 3 to 5 minutes until the chicken is browned and cooked through. Transfer the chicken to a plate and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Add the broccoli, yellow bell pepper, red bell pepper, and shredded carrots. Cook, stirring occasionally, for 4 to 5 minutes until the vegetables are tender-crisp.
- Stir in the ground ginger and minced garlic. Cook for 1 to 2 minutes until the garlic is fragrant, being careful not to burn it.
- Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables, stirring to coat everything evenly. Bring the mixture to a boil, then let it boil for 1 minute, stirring occasionally, until the sauce thickens.
- Sprinkle with sesame seeds and serve immediately over steamed rice or cauliflower rice. Enjoy.
