Ingredients
  

  • 1 cup uncooked long-grain white rice rinsed and drained
  • 1 1/2 cups water
  • 1 teaspoon California extra-virgin olive oil optional, adds sheen and prevents sticking

Method
 

  1. In a medium saucepan with a tight-fitting lid, combine the rinsed rice, water, and olive oil (if using). Bring to a boil over high heat.
  2. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until all the liquid is absorbed and the rice is tender.
  3. Remove the pot from the heat and let it sit, still covered, for 10 minutes. This allows the steam to finish cooking the rice. Then fluff gently with a fork and serve.

Notes

Rinsing the rice removes excess starch and prevents it from becoming gummy. For extra flavor, cook the rice in chicken or vegetable broth instead of water. If using a rice cooker, follow the same ratio but skip the olive oil. Store leftover rice in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. To reheat, add a splash of water and microwave covered, or warm in a skillet with a little oil. Avoid lifting the lid while the rice is cooking, as this releases steam and can result in undercooked rice.
