Prepare the Fillings
- Marinate the carne asada in your favorite marinade for at least 3 hours, or overnight for deeper flavor. Prepare the creamy guacamole and set aside, covered.
- Cook the French fries according to package directions: bake in a 425°F oven, air-fry, or deep-fry until golden and crispy. Keep warm.
Cook the Meat and Assemble
- Dice the marinated flank steak into small, bite-sized pieces. Heat a cast-iron skillet over high heat and cook the steak until charred and cooked through, about 3-5 minutes.
- Char the flour tortilla directly over a gas flame or on a dry skillet for about 30 seconds per side to soften. Spread the creamy guacamole and sour cream down the center of the tortilla.
- Layer the cooked carne asada and hot fries on top. Sprinkle with shredded cheese, salsa, diced onion, and fresh cilantro.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to form a burrito. Microwave for 1 minute to melt the cheese, then serve immediately.

For a quicker version, use diced sirloin seasoned with salt, pepper, and garlic powder instead of marinated carne asada. To cut calories, bake the fries in the oven or use an air fryer, and opt for a low-carb or smaller tortilla. Always soften the tortilla by charring it first for easier rolling. Some people enjoy adding refried beans or chorizo beans, but rice is not recommended here. For extra heat, add sliced fresh or pickled jalapeños. Leftover burrito can be wrapped in foil and reheated in a 350°F oven for 10-15 minutes.
