Sunny California Fresh Peach Salsa

Ingredients
  

  • 1 pound ripe peaches, peeled and diced about 3 medium peaches
  • 1 large Roma tomato, seeded and diced
  • 1/2 small red onion, finely diced
  • 1/2 jalapeno pepper, seeded and minced remove seeds for less heat
  • 2 tablespoons fresh cilantro, chopped
  • 1 large lime, juiced about 2 tablespoons
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste

Method
 

  1. In a medium bowl, combine the diced peaches, tomato, red onion, jalapeno, and cilantro.
  2. Squeeze the lime juice over the mixture, then sprinkle with salt and pepper. Stir everything together until well combined. Cover the bowl and let the salsa rest for 15 minutes at room temperature to allow the flavors to meld. Serve immediately or refrigerate.

Notes

For a milder salsa, remove all seeds and membranes from the jalapeno. To peel peaches easily, score an X on the bottom and blanch in boiling water for 30 seconds, then plunge into ice water. This salsa is best enjoyed the same day, but can be stored in an airtight container in the fridge for up to 2 days. If using frozen peaches, thaw and drain well before dicing. Serve with tortilla chips, or spoon over grilled chicken, fish tacos, or pork chops.
