Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon ginger grated
  • 3 cloves garlic minced
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes optional, for extra heat
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon rice vinegar
  • 1 tablespoon water or as needed for consistency
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup steamed broccoli
  • 2 green onions sliced
  • 1 tablespoon sesame seeds for garnish

Method

Step 1: Cook the Chicken
  1. Heat a large skillet over medium-high heat. Add olive oil. Once hot, add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned and almost cooked through.
Step 2: Make the Honey Ginger Sauce
  1. In a small bowl, whisk together the grated ginger, minced garlic, honey, soy sauce, sriracha, sesame oil, and red pepper flakes. Pour this mixture over the chicken in the skillet. Stir well to coat all pieces in the sauce. Simmer the sauce for 3-5 minutes until it thickens and the chicken is fully cooked.
Step 3: Prepare the Yum Yum Sauce
  1. While the chicken cooks, mix all Yum Yum Sauce ingredients in a small bowl. Whisk until smooth and creamy. If the sauce is too thick, add a little water to reach your desired consistency. Set aside.
Step 4: Assemble the Bowls
  1. Start with a base of cooked rice in each bowl. Arrange shredded carrots, sliced cucumbers, and steamed broccoli around the bowl. Add the sticky honey ginger chicken on top and drizzle with Yum Yum Sauce. Garnish with sliced green onions and sesame seeds for extra texture and flavor.
Step 5: Serve & Enjoy
  1. Grab your chopsticks or a fork and enjoy your homemade Spicy Honey Ginger Chicken Bowl.

Notes

Ingredient Substitution: I often swap out chicken breast for boneless, skinless chicken thighs when I'm looking for a juicier bite; they hold up beautifully to the sauce and absorb all
