Ingredients
  

  • 14 ounces smoked kielbasa sausage sliced into rounds
  • 1 cup butternut squash peeled and cubed
  • 2/3 cup bell pepper seeded and chopped (any color)
  • 1 small zucchini sliced into half-moons
  • 1/3 cup red onion chopped
  • 2 tablespoons olive oil plus extra for greasing pan
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Preheat your oven to 400°F.
  2. Place the butternut squash cubes in a microwave-safe bowl and microwave for 2 minutes to partially soften (it should still be firm, not fully cooked).
  3. Add the partially cooked squash, bell pepper, zucchini, red onion, and sliced kielbasa to a large mixing bowl.
  4. Drizzle the olive oil over the ingredients, then sprinkle with dried thyme, smoked paprika, garlic salt, and black pepper.
  5. Toss everything together until each piece is evenly coated with oil and spices.
  6. Lightly brush a rimmed baking sheet with olive oil (or line with parchment paper if preferred).
  7. Spread the mixture in a single layer on the prepared baking sheet.
  8. Roast for 25 minutes, or until the vegetables are tender and lightly browned, stirring halfway through if desired.

Notes
