Ingredients
  

  • 24 oz crimini mushrooms aka baby bella mushrooms
  • 1/4 cup olive oil
  • 1 tsp fresh cracked black pepper to taste
  • 1 1/2 tsp garlic powder
  • salt to taste
  • 2 tbsp salted butter melted
  • 1 garlic clove pressed

Method
 

  1. Preheat oven to 425°F. Lightly grease a large rimmed baking sheet, ensuring it can fit all mushrooms in a single layer.
  2. Cut off the bottom of mushroom stems. Wipe mushrooms clean with a damp paper towel. Halve any mushrooms that are too large.
  3. Place mushrooms in a mixing bowl. Add olive oil and quickly toss to coat.
  4. Add salt, pepper, and garlic powder. Toss mushrooms to evenly coat them with seasoning.
  5. Spread mushrooms in a single layer on the prepared baking sheet. Turn each mushroom stem-side down.
  6. Bake for 20-25 minutes. Halfway through, remove the baking sheet from the oven, strain off the liquid, and immediately return it to the oven to maintain temperature.
  7. While mushrooms bake, melt butter and mix it with pressed garlic.
  8. Once mushrooms are done, transfer them to a clean mixing bowl. Toss with the melted butter and garlic mixture.
  9. Serve immediately.

Notes

Storing: Store cooked mushrooms in a food storage container with a lid. Store cooked mushrooms in an air-tight container in the refrigerator for up to 3 days.
Additional flavors:
  • Make them cheesy – Sprinkle on some freshly grated parmesan after baking.
  • Add some herbs – Fresh parsley or thyme goes well with mushrooms.
  • Make them even more garlicky– Mix in some freshly minced garlic with mushrooms before baking.
  • Add a little spice – Crushed red pepper flakes add the perfect amount of heat.
