Ingredients
  

Thai Basil Stir Fry
  • 1/2 cup brown onion or shallot finely chopped
  • 8 oz ground chicken
  • 5 cloves garlic minced
  • 1/2 cup Thai basil or regular basil packed
  • 1 medium red chili thinly sliced
  • 1 medium mild green pepper such as Anaheim or poblano, thinly sliced
  • 2 tablespoons avocado oil for cooking
Sauce
  • 1 tablespoon light soy sauce low sodium if possible
  • 1 tablespoon dark soy sauce low sodium if possible, gluten-free if needed
  • 1 tablespoon maple syrup or 2 teaspoons liquid honey
  • 1 teaspoon garlic chili sauce or sriracha
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
For Serving
  • 1 cup uncooked rice for serving
  • 2 stalks green onion sliced, for garnish
  • extra basil leaves for garnish
  • sesame seeds for garnish
  • prawn crackers for serving, optional
  • 2 fried eggs for serving

Method
 

Stir-Fry
  1. Finely mince the garlic and thinly slice the green chili.
  2. Heat avocado oil in a nonstick skillet or wok over medium-high heat. Add the chopped onion or shallot and cook for 2 minutes, then add the garlic and green chili. Stir for 30 seconds until fragrant.
  3. Add the ground chicken and cook, breaking it up, until no longer pink and slightly browned, about 4-5 minutes. Avoid overcooking to keep it juicy.
  4. Pour in the soy sauces, maple syrup, chili sauce, oyster sauce, and fish sauce. Add the sliced red chili and basil leaves. Stir until the basil wilts and the sauce coats the chicken, about 1 minute. If the mixture seems dry, add a splash of water.
  5. Serve immediately over steamed rice, topped with a fried egg, prawn crackers (if using), green onions, extra basil, and a sprinkle of sesame seeds.

Notes

For a milder dish, remove seeds from the red chili. You can substitute regular basil if Thai holy basil is unavailable. Leftovers keep in the fridge for 2-3 days. To reheat, add a tablespoon of water or broth to the skillet to revive the sauce. This recipe is naturally gluten-free if you use tamari instead of soy sauce.
