Ingredients

  • 1/2 cup honey
  • 2 tablespoons hot sauce like Frank's RedHot
  • 2 tablespoons red pepper flakes

Method

  1. In a 2-cup glass measuring cup, combine the honey, hot sauce, and red pepper flakes.
  2. Microwave on high for 1 minute, then stir. Continue microwaving in 20-second bursts, stirring between each, until the mixture reduces to a generous 1/2 cup (about 8 total intervals). Watch closely to prevent bubbling over.
  3. Pour the mixture through a fine-mesh strainer into a clean jar to remove the pepper flakes. Use warm or let cool to room temperature before storing.

Notes

Substitute with any hot sauce you like; sriracha or chipotle hot sauce work well.
Store in an airtight jar at room temperature for up to 1 month; if it crystallizes, reheat gently in the microwave.
To make ahead, simply prepare and keep in a sealed container; it thickens slightly as it cools.
Avoid overheating; watch closely to prevent the honey from boiling over the cup.
Drizzle over fried chicken, roasted vegetables, or mix into salad dressings for a spicy kick.
