Mediterranean Roasted Eggplant with Tahini and Dates

Ingredients
  

  • 1 large globe eggplant cut into 1 1/2-inch cubes
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground cardamom optional
  • 4 tablespoons tahini stirred well before measuring
  • 2 to 3 tablespoons warm water as needed to thin the sauce
  • 1 tablespoon fresh Meyer lemon juice from about half a lemon
  • 1 tablespoon fresh flat-leaf parsley finely chopped
  • 3 whole pitted Medjool dates finely chopped, optional

Method
 

  1. Heat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper.
  2. Cut off the stem and base from the eggplant. Slice it into 1 1/2-inch thick rounds, then cut the rounds into evenly sized large cubes.
  3. Place the eggplant cubes in a large mixing bowl and drizzle with the olive oil. Toss until every piece is lightly coated.
  4. In a small bowl, stir together the salt, black pepper, cumin, coriander, cinnamon, cardamom, dried basil, oregano, and garlic powder.
  5. Spread the eggplant cubes in a single layer on the prepared baking sheet. Sprinkle the spice blend over the top, then use your hands to rub the seasoning onto all sides. Use all or nearly all of the spice mix.
  6. Roast for 20 minutes. Remove the pan from the oven, flip or stir the eggplant with a thin spatula, and return to the oven for another 5 to 10 minutes, until tender and browned on the edges but not shriveled.
  7. While the eggplant roasts, make the tahini sauce. In a blender, food processor, or bowl, combine the tahini, 2 tablespoons warm water, lemon juice, and a pinch of salt. Whisk or blend until smooth, adding the remaining 1 tablespoon warm water if the sauce is too thick.
  8. Transfer the roasted eggplant to a serving dish. Drizzle with the tahini sauce, or serve it on the side if you plan to have leftovers. Top with fresh parsley and chopped dates, if using.

Notes

Use a rimmed baking sheet and keep the eggplant cubes in a single layer so they caramelize instead of steaming.
If your tahini is very thick, whisk it with warm water first, then add lemon juice until pourable.
Swap the dates for chopped dried apricots or golden raisins, or leave them out for a savory version.
Store leftover roasted eggplant in an airtight container in the fridge for up to 3 days; keep the sauce separate.
Reheat in a 375 degree F oven or air fryer to bring back crisp edges.
Serve alongside grilled chicken, fish, chickpeas, or over a grain bowl with fresh greens.
Make the tahini sauce up to 1 day ahead and thin it with a little water before serving.
