Ingredients

Hibachi Chicken Marinade
  • 1 lb boneless skinless chicken breasts, cut into bite sized pieces about 450 g
  • 1 tbsp toasted sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 4 cloves garlic, finely minced
  • 1 tsp fresh ginger, grated
Mustard Dipping Sauce
  • 1/2 cup light mayonnaise
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Dijon mustard
Sauteed Vegetables
  • 1 tbsp olive oil
  • 1 carrot, peeled and sliced thin on a bias
  • 1 cup mushrooms, sliced
  • 1 yellow onion, sliced into strips
  • 1 zucchini, sliced into half moons
  • 1 tbsp soy sauce
Fried Rice
  • 2 cups cooked white rice, chilled
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 large egg
  • 4 green onions, thinly sliced

Method

  1. Whisk the sesame oil, soy sauce, hoisin sauce, minced garlic, and grated ginger together in a small bowl until smooth. Pour the mixture over the cubed chicken and toss so every piece is coated.
  2. Warm a large skillet over medium high heat and add the chicken with all of its marinade. Cook for roughly 10 minutes, stirring now and then, until the pieces are cooked through and lightly browned. Move the chicken to a plate and wipe the skillet clean with a paper towel.
  3. Prepare the rice following the package directions on the stovetop or in a rice cooker, or use rice you cooked up to 2 days ahead and chilled. While the rice cooks, stir the mayonnaise, soy sauce, rice vinegar, and Dijon mustard together for the dipping sauce and set it aside.
  4. Return the skillet to the heat and add the olive oil. Toss in the sliced carrot, mushrooms, onion, and zucchini, then season with salt, pepper, and the soy sauce. Cook for about 5 minutes, just until the vegetables are tender but still have a little bite. Slide them onto a plate and set aside.
  5. In the same skillet, melt the butter and saute the garlic for about 30 seconds, just until it smells fragrant. Add the cooked rice and soy sauce and stir constantly for 5 minutes so the rice heats through and soaks up the flavor.
  6. Push the rice to the edges to open a well in the middle and crack the egg into it. Scramble the egg in that space until it is barely set, then fold it into the rice. Stir in the sliced green onions and pull the skillet off the heat.
  7. Divide the fried rice among plates and top with the chicken and sauteed vegetables. Serve the mustard sauce on the side for dipping or drizzling.

Notes

No hoisin sauce in the pantry? Use an equal amount of teriyaki sauce, or combine soy sauce with a small spoonful of honey or brown sugar.
Rice vinegar can be replaced with seasoned rice vinegar or a splash of apple cider vinegar in the mustard sauce.
Slice the chicken against the grain and let it rest in the marinade for at least 20 minutes while you chop the vegetables for the most tender results.
Day old chilled rice fries up far better than fresh rice because the grains stay separate instead of clumping together.
Keep the skillet hot and avoid overcrowding it when cooking the chicken so the pieces brown instead of steaming.
Store leftovers in an airtight container in the refrigerator for up to 5 days, and freeze the cooked chicken and rice separately for up to 3 months, thawing overnight in the fridge before reheating.
Round out the plate with pickled ginger, yum yum sauce, or a squeeze of lemon along with the mustard sauce.
