Ingredients
  

For the Salad
  • 1 1/2 pounds zucchini (small, firm) diced into 1/2-inch pieces
  • 3 cups fresh corn kernels (from about 4 ears) grilled then cut off the cob
  • 1/2 cup red onion thinly sliced
  • 1/2 cup fresh basil torn or chiffonade
  • 4 ounces feta cheese crumbled
For the Dressing
  • 3 tablespoons extra-virgin olive oil (preferably California)
  • 2 tablespoons fresh Meyer lemon juice or regular lemon
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon kosher salt divided
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prep the Vegetables
  1. Place the diced zucchini in a colander, toss with 1/2 teaspoon of the salt, and let drain for 10 minutes to remove excess moisture. Pat dry thoroughly with a clean kitchen towel.
  2. Grill the corn on the cob over medium-high heat, turning occasionally, until lightly charred in spots, about 8 minutes. Let cool slightly, then slice the kernels off the cobs. If using frozen corn, thaw completely, pat dry, and char in a dry skillet over high heat for 2–3 minutes.
Make the Dressing
  1. In a large bowl, whisk together the olive oil, lemon juice, white wine vinegar, Dijon mustard, remaining 1/4 teaspoon salt, and black pepper until emulsified.
Assemble the Salad
  1. Add the drained zucchini, grilled corn, red onion, and basil to the bowl with the dressing. Toss gently to coat. Fold in the crumbled feta until just combined – avoid overmixing so the feta stays in nice clumps. Taste and adjust with more salt, pepper, or lemon juice if needed; the salad should taste bright and well-seasoned.
  2. Let the salad sit at room temperature for 5 to 10 minutes for the flavors to meld. Serve immediately, or refrigerate for up to 2 hours. Note that the zucchini will soften as it sits, so it’s best not to make this more than a few hours ahead.

Notes

For the best texture, choose small, firm zucchini with minimal seeds – they're sweeter and less watery. If fresh corn isn't available, frozen corn works well; just be sure to thaw and pat it very dry before charring. This salad pairs beautifully with grilled chicken or fish, or you can stuff it into a pita with hummus for a light vegetarian lunch. Leftovers can be refrigerated in an airtight container for up to 1 day, but the texture will soften. Avoid over-salting the dressing because the feta adds salinity. For a dairy-free version, omit the feta or use a vegan alternative.
