Ingredients
  

Crispy Chicken Marinade
  • 1 3/4 pounds boneless, skinless chicken breasts about 4 pieces
  • 2 cups buttermilk
  • 1 tablespoon paprika
  • 1/2 teaspoon garlic powder
Cornflake Coating
  • 4 ounces cornflakes about 1 1/2 cups crushed
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup buttermilk for dredging
Frying and Toppings
  • as needed vegetable oil or clarified butter for shallow frying
  • 4 burger buns preferably brioche
  • 4 tablespoons unsalted butter for toasting buns
  • 4 large lettuce leaves such as romaine or iceberg
  • 1 1/2 ounces dill pickles sliced
  • 2 cups prepared coleslaw
Spicy Mayo Sauce
  • 1/3 cup mayonnaise
  • 1 tablespoon Sriracha sauce plus 1 teaspoon

Method
 

Marinate the Chicken
  1. Rinse the chicken breasts and pat dry. Trim any visible tendons or cartilage. Place them in a sealable container or zip-top bag.
  2. Add the buttermilk, paprika, and garlic powder. Seal and shake to coat. Refrigerate for at least 30 minutes, preferably overnight.
Prepare the Coating
  1. Crush the cornflakes into coarse crumbs (use your hands or a bag and rolling pin). In a shallow dish, combine the crushed cornflakes, all-purpose flour, and baking powder. Mix well.
  2. Pour the remaining 3/4 cup buttermilk into a separate shallow dish.
Bread and Fry the Chicken
  1. Remove the chicken from the marinade, letting excess drip off. Dredge each piece first in the cornflake mixture, then dip into the buttermilk, and dredge again in the cornflake mixture, pressing gently to adhere. Set aside and let rest at room temperature for 10 minutes.
  2. In a large skillet or Dutch oven, heat about 1 inch of vegetable oil or clarified butter to 325-340°F (163-170°C). Fry the chicken pieces in batches, turning once, until golden brown and cooked through (internal temperature 165°F), about 6-8 minutes per side. Transfer to a wire rack to drain.
Prepare the Sauce and Buns
  1. Stir together the mayonnaise and Sriracha in a small bowl until smooth. Set aside.
  2. Wash and dry the lettuce leaves. Set pickles and coleslaw nearby.
  3. Slice the burger buns in half. Melt the butter in a skillet over medium heat and toast the cut sides of the buns until golden and fragrant.
Assemble the Burgers
  1. Spread about 1 tablespoon of spicy mayo on the bottom half of each bun. Top with a lettuce leaf, a piece of crispy chicken, a few pickle slices, and a generous spoonful of coleslaw.
  2. Spread the remaining spicy mayo on the top half of each bun and place it on top. Serve immediately.

Notes

For extra crunch, pulse the cornflakes in a food processor until coarse but not powdery. If you don't have buttermilk, make a quick substitute: 1 cup milk plus 1 tablespoon lemon juice or vinegar, let sit 5 minutes. Leftover burgers can be kept in the fridge for up to 2 days, but the coating will soften; reheat in an air fryer or oven at 375°F for 5-7 minutes. Don't skip resting the breaded chicken—it helps the coating adhere during frying. Adjust the Sriracha to your heat preference; substitute with your favorite hot sauce. Coleslaw can be homemade or store-bought; look for a creamy, not watery variety.
