Notes

Buttermilk Soak: I always let the chicken sit in buttermilk for at least 30 minutes, but if you have the time, letting it go for a few hours or overnight makes a huge difference.
It tenderizes the meat and helps the coating stick so much better.
Flavor Variations: Feel free to play with the spice mix.
I sometimes add a teaspoon of dried oregano or a pinch of cayenne for extra heat.
It's a great way to make it your own without changing the base.
Storage and Reheating: If you have leftovers, store the cooked chicken separately from the buns and toppings.
Reheat it in the air fryer at 350°F for about 3-4 minutes to bring back the crunch.
Avoid the microwave, as it will make the coating soggy.
Make Ahead Tip: You can prep the seasoned flour and mix the spicy mayo a day ahead.
Just keep them covered in the fridge.
Then all you need to do is dredge and cook when you're ready.
Avoid Overcrowding: I learned this the hard way.
Don't stuff too many pieces in the air fryer basket at once.
Give them space so the hot air can circulate, which gives you that even, golden crust.
Cook in batches if needed.
Serving Suggestion: For a fun twist, I like to use brioche buns.
They toast up beautifully and add a touch of sweetness that balances the spicy mayo.
A side of crispy fries or a simple coleslaw completes the meal perfectly.
Equipment Alternative: If you don't have an air fryer, you can bake these in a regular oven at 400°F on a wire rack over a baking sheet.
Flip them halfway through, and they'll still come out crispy and delicious.
