Ingredients
  

  • 1 cup Dungeness lump crab meat, fresh or canned drained well and picked over for shells
  • 1 cup cooked small shrimp, peeled and deveined chopped into bite-size pieces
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk at room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup cream cheese softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seafood seasoning blend such as Old Bay
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper optional
  • 1 cup panko breadcrumbs or coarse sourdough breadcrumbs for a California twist
  • 2 tablespoons fresh parsley chopped, plus more for garnish
  • 1 tablespoon Meyer lemon juice or regular lemon juice

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly butter a 9x9-inch baking dish or coat it with nonstick spray.
  2. If using raw shrimp, poach them in boiling water until pink, about 2 to 3 minutes. Drain, then chop into bite-size pieces. Pat the crab meat dry with paper towels and remove any shell bits.
  3. Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for about 2 minutes, stirring constantly, until the mixture turns pale golden and smells nutty.
  4. Slowly pour in the room-temperature milk while whisking vigorously to keep the sauce smooth. Continue whisking until the sauce thickens and coats the back of a spoon, about 5 to 7 minutes. Add a splash more milk if it becomes too thick.
  5. Remove the saucepan from the heat. Stir in the cheddar, Parmesan, and softened cream cheese until fully melted and smooth. Season with garlic powder, onion powder, seafood seasoning, salt, black pepper, and cayenne if using. Taste and adjust the seasoning.
  6. Gently fold the crab meat and chopped shrimp into the sauce. Add the Meyer lemon juice and chopped parsley, stirring just until combined so the crab stays in nice chunks.
  7. Pour the seafood mixture into the prepared baking dish and smooth the top into an even layer.
  8. Sprinkle the panko breadcrumbs evenly over the casserole. For extra richness, toss the crumbs with a little melted butter or olive oil before adding them on top.
  9. Bake for 25 to 30 minutes, until the topping is golden brown and the sauce is bubbly around the edges.
  10. Let the casserole rest for 5 minutes before serving. Garnish with additional chopped parsley if desired.

Notes

Use fresh Dungeness crab if available; canned lump crab drained well also works.
Fold the crab in last and stir lightly so the lumps stay intact.
Substitute panko breadcrumbs or crushed buttery crackers for the sourdough crumbs.
Let the cream cheese soften beforehand so the sauce turns out smooth.
For a make-ahead meal, assemble the casserole and refrigerate, but add the breadcrumb topping right before baking.
Store leftovers in the fridge for up to 3 days and reheat in a 350°F oven to crisp the topping.
Serve with a simple green salad or roasted broccoli to balance the richness.
