Ingredients
  

  • 3 cups cooked chicken, shredded or diced
  • 1 cup red grapes, halved
  • 1/2 small red onion, finely diced
  • 2 stalks celery, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice from about half a lemon
  • 1/2 teaspoon salt plus more to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper plus more to taste

Method
 

  1. In a large bowl, combine the cooked chicken, halved red grapes, diced red onion, and diced celery.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, salt, garlic powder, onion powder, and black pepper. Taste and adjust seasoning with additional salt and pepper if needed, starting with small amounts.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Serve immediately, or store in an airtight container in the refrigerator for 3 to 5 days. Discard any leftovers that have been left out at room temperature for more than 2 hours.

Notes

For a lighter version, substitute half the mayo with plain Greek yogurt. Use rotisserie chicken to save time. Add chopped toasted almonds or walnuts for crunch. This salad tastes even better after a few hours in the fridge. Serve on croissants, lettuce wraps, or with crackers. Avoid overmixing to keep the texture chunky. Adjust lemon juice to your preference for brightness.
