Ingredients
  

  • 1 head broccoli chopped into florets (about 4 cups)
  • 2 large eggs room temperature
  • 1 cup parmesan cheese shredded
  • 1 cup cheddar cheese shredded
  • 2 teaspoons garlic minced
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon cayenne pepper optional

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large food processor, add the chopped broccoli florets and pulse until finely chopped.
  3. In a large mixing bowl, combine the processed broccoli, eggs, parmesan cheese, cheddar cheese, flour, minced garlic, kosher salt, and black pepper. Mix until well combined.
  4. Scoop portions of the mixture onto the prepared baking sheet, leaving space between each scoop.
  5. Flatten each scoop with the back of a glass.
  6. Bake for 10 minutes, then flip the bites and bake for another 10 minutes until golden brown.
  7. While baking, prepare the dipping sauce by mixing sour cream, kosher salt, black pepper, garlic salt, and cayenne pepper in a bowl and refrigerate.
  8. Remove the bites from the oven, let cool slightly, and serve warm with the creamy dipping sauce.

Notes

Cheese Swap: I love mixing parmesan and cheddar here, but if you only have one on hand, use a full cup of either.
Sharp cheddar gives a bolder flavor, while more parmesan makes them extra crispy.
Make Ahead: You can prep the broccoli mixture up to a day in advance and keep it covered in the fridge.
Just give it a good stir before scooping and baking, as some liquid may have settled.
Storage: These bites are best fresh from the oven.
For leftovers, store them in an airtight container in the fridge for up to three days.
Reheat them in a 350°F oven for about 5 minutes to bring back the crunch, not the microwave.
Common Mistake: Do not skip drying the broccoli after washing it.
Extra moisture makes the bites soggy instead of crunchy.
I pat mine dry with a clean kitchen towel before pulsing it in the food processor.
Serving Suggestion: I like to serve these warm with the creamy dipping sauce, but they are also fantastic on their own as a snack.
For a fun twist, try them with a squeeze of fresh lemon juice over the top.
Equipment Alternative: If you don't have a food processor, just finely chop the broccoli by hand with a sharp knife.
It takes a little more time, but the texture turns out great and you get nice little flecks throughout.
