California Pierogi Lasagna

Ingredients
  

  • 2 pounds frozen cheddar pierogi
  • 1 16-ounce jar Alfredo sauce
  • 14 ounces smoked kielbasa sausage sliced into rounds
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced green onions for garnish

Method
 

  1. Preheat your oven to 350 degrees F. Coat a 9x13-inch baking dish with nonstick spray. Also spray one side of a large piece of aluminum foil (big enough to cover the dish) with nonstick spray.
  2. Arrange half of the frozen pierogi in a single layer in the prepared dish.
  3. Spoon half of the Alfredo sauce evenly over the pierogi.
  4. Scatter half of the sliced kielbasa over the sauce.
  5. Sprinkle half of the shredded mozzarella and cheddar over the kielbasa.
  6. Repeat the layers with the remaining pierogi, Alfredo sauce, kielbasa, and cheeses. Cover the dish with the prepared foil (sprayed side down) and bake for 20 minutes.
  7. Remove the foil and continue baking until the casserole is bubbly and heated through, about 20 to 25 minutes more. Garnish with sliced green onions before serving.

Notes

Use frozen pierogi straight from the freezer; no need to thaw or boil. Freshly shredded cheese melts smoother than pre-shredded. Let the casserole rest for 5 minutes after baking to help the sauce thicken. For a golden top, broil for 1-2 minutes at the end. Leftovers keep in the fridge for up to 3 days; reheat in the oven or microwave. Swap kielbasa with smoked sausage or cooked chicken for variety.
