Ingredients
  

For the chicken
  • 1 whole chicken (about 4 pounds) giblets removed
  • 2 tablespoons California olive oil extra virgin
  • 1 teaspoon salt plus more for seasoning
  • 1/2 teaspoon black pepper freshly ground
For the butter sauce
  • 1/2 cup unsalted butter 1 stick, softened
  • 4 cloves garlic minced
  • 2 tablespoons fresh ginger grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1 whole Meyer lemon zested and juiced
  • 1/4 cup fresh cilantro chopped, plus more for garnish
  • 1/4 cup plain Greek yogurt full-fat
For the vegetables
  • 2 cups cherry tomatoes halved
  • 1 large red onion cut into wedges
  • 4 cloves garlic smashed, unpeeled

Method
 

Prepare the chicken
  1. Preheat your oven to 375°F. Pat the chicken dry with paper towels, then season generously inside and out with salt and pepper. Rub the olive oil all over the skin.
Make the butter mixture
  1. In a small bowl, combine the softened butter, minced garlic, grated ginger, cumin, coriander, turmeric, cayenne (if using), Meyer lemon zest and juice, and chopped cilantro. Mix until smooth.
  2. Gently loosen the skin of the chicken breast and thighs with your fingers, then spread about half of the butter mixture directly under the skin. Rub the remaining butter all over the outside of the chicken.
Assemble and bake
  1. Place the chicken in a large roasting pan or cast-iron skillet. Arrange the cherry tomatoes, red onion wedges, and smashed garlic cloves around the chicken.
  2. Roast for 45 to 55 minutes, basting with the pan juices halfway through, until the skin is golden brown and a thermometer inserted into the thickest part of the thigh registers 165°F.
  3. Let the chicken rest for 10 minutes before carving. Garnish with additional cilantro and serve with the roasted vegetables and pan juices.

Notes

For a dairy-free version, substitute the butter with vegan butter or coconut oil and use dairy-free yogurt.
