Zesty Corn Bread


2 Boxes 8 ½ Ounce each corn bread mix
2 eggs beaten
2/3 cups milk
1 tsp vanilla extract
1 Jalapeno pepper seeded and chopped
3 cups frozen Sweet kernel Corn – Thawed and drained


Combine all ingredients in a large bowl until moistened
Spoon into 8 inch square baking pan
Bake at 350 degrees for 45 minutes or until lightly brown

Yield 10 servings
