Gnocchi
Ingredients
3 Cups white potatoes, cooked and mashed
1 cup flour
2 egg yolks
¼ cup Parmesan cheese
Directions
Combine all ingredients
Mix well
Place about ½ tsp of batter on fork and roll off with thumb
Drop the dumplings gently into rapidly boiling water
When the dumplings float to the top of the water, they are done
Serving Suggestions
Sauté some garlic in a little butter and pour it over the gnocchi.
Tomato, pesto and Alfredo sauces also work well over gnocchi.
